The Chablis vineyard holds a unique place in Burgundy’s wine landscape. Located in the north of the region, it is world-renowned for producing some of the purest, most mineral-driven white wines made from the Chardonnay grape.
The uniqueness of Chablis wines comes mainly from the region’s geology. The vineyards rest on Kimmeridgian soils formed more than 150 million years ago. These soils, made up of marl and limestone rich in marine fossils, give the wines their characteristic minerality and great freshness.
The vineyard is structured around four appellation levels: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Chablis Grands Crus are grouped on a single southwest-facing hill, opposite the Serein River. These prestigious terroirs produce complex, deep wines capable of aging for several decades.
Around Chablis, the Grand Auxerrois region also offers many lesser-known appellations. The village of Irancy is renowned for its red Pinot Noir wines, sometimes blended with the ancient César grape. Saint-Bris is unique in Burgundy, as it produces white wines from Sauvignon Blanc.
Discovering these vineyards on a private wine tour allows you to better understand the diversity of Burgundy’s vineyards. Between vineyard landscapes, meetings with winemakers, and guided tastings, this day offers a complete immersion in the world of Chablis and Grand Auxerrois wines.
